Green beans are an ideal vegetable snack. Great fresh or chopped into raw salads, they’re a versatile summer favorite. They are also wonderful when made into raw dehydrated crisps. Shoestring shaped, this easy-to-make healthful treat pairs well with hummus, bean or salsa dips, guacamole. Also great when enjoyed by itself as an energizing snack. Requires only a few hours to dehydrate, and takes very little prep time. Enjoy:

Awesome. I just tired my first dried green bean. my boyfriend and I said it would be great if we could make them ourselves SEASONED. so thanks for the ideas. I don’t have a dehydrator, so I would need to dry them in the oven. any clue what temp. I would set the oven on? any prep like quick steam?
Not sure–maybe just put them in at the lowest setting for a couple hours?
I’ve read several diff. answers. evidently… your suppose to “dehydrate” (OVEN) from 120-140 degrees F. Usually begin at 140 for about an hour and by the end you should be down to the lower temp 120; it can take anywhere from 6-12 hrs and sometimes even 14 hours. Depending on how high/low your temp is. I’m about to try that now. First I’m blanching them (steam them for 4 mins.) then plunge in cold water to stop cooking process (5 mins). then put green beans in the freezer for 45 min. After this I am gonna use your recipe and cook low and long until all moisture is gone. Otherwise they would spoil.. maybe this helps others.. because this is what I have learned from reading.
Kristen,
I would blanch them for 10 minutes instead of 4, simply because raw green beans contain small amounts of toxins which are destroyed by heating. According to the studies I have read, 10 minutes in boiling water (not steam) is sufficient to destroy these toxins. Then you can dehydrate at raw temperatures (or above, if you do not have a dehydrator with a thermostat).
Hope this helps.
Wow, interesting. Thanks for sharing!
What is the texture of these green beans like? I had a mixed bag of veggies I had bought on vacation Taiwan and they were light crispy crunchy and so delicious. I have been wanting to make them at home because they were so good! They had green beans, carrots, tarot root, snap peas, etc. in the mix.
